No longer be afraid of cooking fish- it is easy, delicious and nutritious!
Preface: To be upfront, I rarely use measuring equipment when cooking, so the measurements given below are approximations. However, experimentation is at the heart of what it is to cook in my eyes, so take my recipes and run away with them. Follow recipes, but trust your instinct in the kitchen as well! Most of my recipes evolve out of a necessity for dinner after a long day of school and work, based on creatively putting together what needs to be used in the fridge. Sometimes this results in a strange subpar meal, but this one came out totally delicious!
4 fillets of tilapia (or any fish of your choice)
3 tbs soy sauce
1 tbs honey
2 tbs rice vinegar
dash of chili pepper (or 3 dashes:)
2 tbs canola oil
3 cloves garlic
1/4 small onion
Food prep: Crush and mince garlic. Cut onion into slices.
Heat large skillet to medium/medium-high heat with 1 tbs canola oil. Place tilapia on a plate. Mix all other ingredients in a bowl. Pour mixture over tilapia. Slide tilapia/onion/sauce onto the hot skillet. Cook for 2-3 minutes on one side ( do not move it around a lot), flip fish over and cook for 1 more minute (or until cooked to your firmness and liking). Quick and easy 5 minute meal!
Definitely serve with a side salad to balance things out. When I ate this our salad had green lettuce, red bell pepper, purple cabbage, shredded carrot, kidney beans, leftover corn from the cob, and cherry tomatoes. More on healthy salad dressings to come...
